Today I want to show you an extremely quick recipe for porridge oats biscuits that I had done within 30 minutes yesterday. And by done I mean, ingredients prepared, the biscuits all done and formed AND baked! All within 30 minutes. Ps. I needed something to munch on while watching the qualifiers yesterday! 😀
I personally love recipes where you just throw all the ingredients into a bowl and that’s it you’re done without any extra effort and this is one of them. Plus you can change it around to suit your taste so it’s a win win. AND they’re yummy, I mean they were all gone yesterday already so hey, must have been good.
Ingredients (made 17 veryyyy thick biscuits)
2 cups of porridge oats
1.5 cups of flour
½ tsp of baking powder
½ cup of sugar
2 tbsp of honey
100g of melted unsalted butter
100-150g of coconut shreds, almonds, nuts, raisins (anything you want! I used about 60g of coconut shreds and 50g of almonds and the biscuits came out fab)
Firstly, preheat your oven to 160°C. Now all you have to do is throw all the above ingredients into a bowl and mix them together! You can use a spoon or just do it with your hand. If the mixture is too thick just add a little bit of water or milk. That’s all it takes!
Once you’re done that just spoon out bits of the dough and form your biscuits on the tray lined with baking paper or one of the non stick mats. You can sprinkle them with sugar on top or put some seeds like pumpkin or sunflower, like I did.
If you make thinner biscuits they won’t bake as long so bear that in mind!
Bake them for 7-12 mins all depending on your oven and the thickness of the biscuits. Once they start turning golden brown-ish they should be ready!
These are perfect for a little snack or munch in front of the tele but also if you’re looking for something for breakfast or to eat with your coffee.
I’m going to try making them in a little reduced fat version and also adding in some fruit and see how it turns out since they only take a little bit of time to make.
